An Electric Bill Surprise - Homemade Cracker Jacks


I found this recipe in my electric bill.  When we were first married (oh boy that was... hmm... 30 some years ago) there was a recipe in each months bill.  This recipe has turned out to be one of our family's all time favorites.  I have made this for almost every school function that the kids have been involved in.  It is always an instant hit!  This recipe may be one of the only things in the mail I was excited about opening from the electric company. 3 qts. popped popcorn 1 cup brown sugar 1/2 cup margarine or butter 1/4 cup white corn syrup 1/2 t. salt 1/2 t. soda Brown paper grocery bag Cooking spray Spray inside of a large brown paper bag with cooking spray.  Pour popped corn into paper bag.  Combine brown sugar, margarine, corn syrup and salt in a microwave safe dish.  Microwave on high for 2 minutes.  Stir; microwave on high for 2 minutes.  Stir in soda til all soda has dissolved and it is foamy.  Pour mixture over the popcorn in the bag.  Close bag and shake well.  Microwave for 1 more minute.  Remove bag and shake well.  Microwave for 1 more minute on high. Shake.  Pour out onto waxed paper to cool.  As it cools, mix around with wooden spoon to keep from sticking together.  Store in Ziploc bags.
