I love boneless, skinless chicken! It's so simple and the meat can take pretty much any flavoring, so you can experiment with it (garlic and brown sugar? Greek yogurt and parmesan cheese? Crushed up corn flakes and black pepper? Yes, please!) My tip on making it perfect -- learn what it takes to cook it and leave it alone! Don't poke it, don't open the oven, don't smash it or cut it open...you'll ruin the flavor and make it dry. If you're pan-cooking, do 5 minutes on each side for a 1.5-inch thick piece.
