One of the things that most surprised and disappointed me on our recent trip to Rome was the prevelance of Frozen Pizza. Italian food is my absolute favourite, but I did not came all the way to italy for frozen food! The rule seems to be that if restaurants are serivng anything but fresh food they have to declare it on the menu, so make sure you have a look before you sit down and order, and if you're in any doubt just ask your waiter.
The backlash to the frozen debacle is that places who are making fresh pizza tend to shout about it, proudly declaring their wood-fired wares.
If in doubt ask your concierge to recommend somewhere, or try out my new fave; il Pomodorino, just off Via Venetto serves the best home-made pizza I've ever eaten, it's no tourist trap, it's always jam-packed full of locals, and it's not going to break the bank (we had two large pizzas, peroni and prosecco for just under 30euros...in a very expensive city that's not half bad!And check out how delicious that pizza looks in the photo!)
