Pancakes are such a yummy breakfast staple, but for anyone watching what they eat they can also be a huge diet pitfall. Try to make a better pancake -- you'll feel more full and get more nutrients. Try using a high-fiber instant pancake mix (sold in most grocery stores). Or, use a regular mix and add healthy goodies. My personal favorites are cooked rolled oats, flax seeds, pumpkin puree, apples and cinnamon, or chopped almonds and vanilla. These additions all make a traditional pancake more interesting to eat, so you don't mindlessly chow down on an entire stack. The extra protein, fiber and vitamins will keep you energized and full. And, most importantly, they're absolutely delicious!
